Now that we can all exhale, let’s consider mustard. In my ceaseless quest for interesting stuff to share, I found a store called Maille in Paris, It offers mustard on tap, yes on tap, poured into individual earthenware pots – which can be refilled. There are three standard varieties: with dry white wine, chablis, or chardonnay. Apparently, French mustard made in France is hotter and more powerful than the exported varieties. I so look forward to testing it for myself.
Maille also carries mustard in jars, including whole grain (a l’ancienne) and with some standard flavors (tarragon, honey). There are also seasonal varieties (fig and coriander!), in keeping with the French focus on the joys of eating by season.
The crocks, specialty mustards, and such run around 8 euros or so, making them nifty gifts.
